CUCUMBER & SHRIMP SALAD ROLL
tomato consommé

Pairing: 2021 Chardonnay, Mer Soleil, Santa Lucia Highlands
Taking its name from the sea and sun – the two forces of nature that shape its exotic character – this wine is as dramatic as the place where it is sourced. With morning fog, bright sunshine and gusting winds, the Santa Lucia Highlands (40 minutes south from Monterey, California) has an extended growing season. Grapes stay on the vine longer, leading to the development of intense aromas such as custard and toasted almonds, rich fruit flavors and enlivening lemon/lime.

-----

RICOTTA CRÊPE
mushrooms

Pairing: 2021 Pinot Noir, Sea Sun, California
Sea Sun Pinot Noir celebrates our ongoing exploration of California and its great diversity of land. This wine is sourced from premier coastal regions, with cooling breezes off the Pacific Ocean that balance the bright warmth of the sun. These ideal conditions allow for an extended growing season, creating a layered wine that appeals to a wide range palates. Strikingly soft, with scents of baked cherries, vanilla and brown spice.

-----

SEARED SCALLOPS
cauliflower and verjus sauce

Pairing: 2021 Sauvignon Blanc, Emmolo, Suisun Valley

Guided by the idea that “less is more,” this wine is dry and fresh, with crisp fruit flavors and bright minerality. Some of the grapes come from family vineyards in Napa Valley, with the majority coming from Suisun Valley, a “hidden gem” wine region only 30 minutes from Napa. Suisun shares a similar maritime climate and produces exceptional fruit. Wagner's farming practices enable them to create a wine that is not overly ripe – while also not herbaceous – featuring low alcohol and bright acidity.

-----

ALBERTA BEEF TENDERLOIN
swiss chard, gouda, shallot jus

Pairing: 2020 Petite Sirah, Caymus-Suisun, Grand Durif SuisunValley
Only 30 minutes from Napa, Suisun Valley (which became an AVA in 1982) is still largely undiscovered. With its warm days and cool nights, this pastoral region reminds us of Napa Valley in the 1960s. Known for delicious stone fruits and walnuts, it is also gaining recognition for exceptional wine. Durif is synonymous with Petite Sirah, the widely grown grape in the region – “Grand” was added to the name for its grand style. With harmonious tannins, this wine is opulent, luxuriously soft and totally enjoyable.

-----

VALRHONA 72% DARK CHOCOLATE MOUSSE
tangerine gelée, sponge, chocolate crunch

Pairing:  No. 6 Sparkling Wine, Emmolo, Méthode Traditionnelle, California
With a richly developed character inspired by our favorite Champagnes, our No. 6 bottling is a blend of 60% Chardonnay and 40% Pinot Noir, produced on Méthode Traditionelle. This wine is sourced from cooler coastal regions of California and is non-vintage, affording greater ability to achieve our desired style. Features soft bubbles and freshness that yields to creaminess from extended aging.
