Inspired by Alberta's bountiful land and vast landscape—Hawthorn connects people to place through contemporary Canadian cuisine, while re-defining Calgary's culinary experience with family-style dining. 

Hawthorn crafts inspired dishes reflective of our province's vast landscape. Our chefs work closely with farmers and suppliers to source the finest ingredients from across Alberta.

Paying homage to the past, whilst looking forward to the future - the new space sets the stage for old stories to be told and new memories to be made.

Rupert Garcia

Chef de Cuisine, Hawthorn

Originally from the Philippines, Hawthorn’s new Chef de Cuisine, Rupert Garcia, has been in the kitchen since he was 16 years old, surrounded by creative and successful peers who made the industry ‘cool’ for him.

A graduate from SAIT, Rupert received the distinguished Red Seal Chef certification, and became a Chaine Des Rotisseur Member. He worked at prestigious establishments in Calgary and staged for Michelin restaurants in New York and San Francisco. He’s trained in Contemporary Cuisine, with a strong background in French & Asian cuisine.

“I am inspired to showcase what Alberta has to offer, being more than just a meat and potato province. Hawthorn supports local farmers and producers who are the driving force behind our "prairie cuisine" and sustainability movement. Using locally-sourced ingredients in our menus evokes a sense of comfort and delight for our guests.  If there is one menu entrée I would suggest trying at Hawthorn, it would be the Grilled Beef Tenderloin with roasted beets, bone marrow whipped potatoes and red wine jus.”

An award-wining chef, Rupert represented Canada in the Chaine Des Rotisseur, placing 2nd in 2014, and winning his first competition representing SAIT at the CCFCC competition. Rupert has also placed in the Hawksworth Scholarship Culinary Arts Competition, Gold Medal Plates, Canada's Great Kitchen Party (Canadian Culinary Championship), Pig & Pinot, Breakman Foundation, and Chef Meets BC Grapes.
